Waffle Bouquet + Quiche Cupcakes = Fun & Easy Birthday Brunch

Last weekend I threw a surprise birthday brunch for my mommy. It was a great excuse to get our family & friends together on a cold winter morning!  By using a mix of homemade and store bought finger foods, I was able to put it together pretty quickly. Here’s what the menu looked like.

Brunch Buffet

Inspired by an episode of iCarly (yes, I watch iCarly with my 3 yr & 18 mo old boys..and I love it), I designed this fun waffle bouquet using Eggo  mini and regular size waffles.  I also added fruit flowers  made by cutting c antelope and kiwi with my mini cookie cutters.  The kids were so excited to eat “waffles on a stick”… not gonna lie, I liked it too!  Doesn’t everything just taste better on a stick?? I think so!

Making quiche in cupcake form is a great way to get kids & grown-ups to eat their spinach and eggs.  I found a super easy crust-less quiche recipes on www.allrecipes.com and modified it by baking in a greased cupcake pan for 15 minutes.  You should try it, you’ll like it! Let me know how it works out :)

How cute are these cucumber bites?  They are easy and fun to make.  I cut up thick slices of English cucumber and piped yogurt spread (Labne) rosettes on top. Cream cheese would work just fine.  Labne is a Lebanese Yogurt Spread that has a creamier texture and tangier taste. It’s also lower in calories (BIG PLUS). It can typically be found in the refrigerated section at WholeFood or in specialty markets.  Top rosettes with a fresh mint leaf and a green olive.

Homemade mini chocolate chip banana muffins, recipe found on allrecipes.com.  I totally love that site BTW!

Berries and cream croissants, made by spreading softened cream cheese & strawberry jelly on refrigerated “crescent” rolls.

Homemade apple cinnamon oatmeal parfaits for the health conscious.  The oatmeal was sweetened with honey & brown suger, layered with apple sauce, pine nuts and fresh apples.

Fresh squeezed lemonade…j/k, it’s store bought lemonade with fresh lemon and lime slices. I rimmed the lemonade glasses with green sugar to add a little extra sweetness  ;)
