Cucumber pickles and I have a sort of “love-hate” relationship. When they are crispy and spicy with small seeds, I’m in looooove…but when they’re soggy with giant globby seeds, I just want to kick them to the curb… and slash their tires..and take them for all their worth in a messy divorce settlement… Err, anyway, to get my perfect pickle, I decided I need to just make it myself. I researched far and wide to come up with my favorite recipe and technique. This recipe is simple and yields quick results. My sister and I can never wait the full ten days that the recipe calls for, but let me tell you, it’s great even after only two days
Ingredients
- 10- 12 cucumbers, cut in half or quarters (my favorite are homegrown or greenhouse cucumbers*small seeds*)
- 2 cups water
- 1 3/4 cups white vinegar
- 4 cloves garlic, whole
- 1 1/2 tablespoons coarse salt
- 1/2 teaspoon red pepper flakes, or to taste
- 4 sprigs fresh dill weed
- 2 wide mouth glass jars, boil to sanitize
Directions
1. In a medium saucepan, combine water, vinegar, and salt and stir over medium heat until dissolved
*Tip: Use a coated pan, not a stainless steel one, otherwise your garlic will turn green in color. It’s still okay to eat, just looks weird*
