Candy Cane Sparkle Chex Mix

If you haven’t already noticed, I have a bit of an obsession with all things peppermint! I had a baggie of crushed candy cane leftover from my weekend baking extravaganza so I just HAD to find a way to use it up today. After some brainstorming and a recipe search, I decided some Chex Mix.  Based on the ingredients I had on hand, I slightly modified this Sugar Cookie Chex Party Mix recipe from the Chex website and it turned out amaaaaaaazing!

To make this yourself, just follow the recipe on their website with these minor changes:

  • Add 1/8 teaspoon of peppermint extract along with the vanilla extract
  • Add the melted chocolate into your mixing bowl and stir until incorporated
  • Mix in 1/3 cup crushed candy cane and a few pinches of white sugar sprinkles (or edible glitter)
  • Spread onto wax paper lined cookie sheet. Add a little more candy cane and sugar if desired and let cool.

Seriously, this stuff is addictive… you have been warned!

    Yes, it makes a great treat for the office! I packaged some up in cellophane bags with red & white polka dot bows to give to co-workers and teachers at my son’s school. Happy Holidays!
